Maybe you could try half halts or maybe canter her in small circles till she maybe gets tired of it.

Why dont you start over with the walk and trot than slowly move to the canter. Dont let him expect when you are going to canter let it be a treat for him to canter. Lots of circles and all that.

ok this sounds CRAZY!!! but my mare was having this problem a couple of weeks ago. and i let her go. i gave her her head and i galloped till she got tired, then i made her go even more. if your horse is CrAzY when you let her go, then DONT do this.
also, if you dont want to do it on her, try lunging. (i know you said it makes it worse) let her run as much as she wants, then when she gets tired, make her go more.
im going to see my trainer tomorrow, i'll ask her and get back to you :D

The best luck you're going to have is to start teaching her to listen to you at any gait. Does she know her leg cues? Can you get her to two-track? That is, after all, a dressage move so she'll need to know that. Start her in a 20m circle and ask her with your heel ONLY to slowly spiral to the center of the circle, then slowly spiral back out. When she can do this calmly without her thinking your heels are asking her to go, Go, GO then you can adjust her speed. Ask for a nice, collected jog. Do the same thing, slowly spiral in and then slowly spiral out. Do about three whole circles per spiral (if that makes any sense). Also, ask her to do serpentines at the trot, then slowly ask for the canter. If she gets silly you can use your outside heel to ask her to begin a spiral. Trust me, horses don't like spirals. This is how I got my sister's HOT HOT gaming horse to slow down for shows. It works, try it. It's not a quick fix, but it's faster than starting from the beginning and certainly not harsh. You shouldn't even need contact with her mouth with this exercise except to slow her down gradually. Hope this helps.

Use half-halts and a steady tone of voice. Try lunging while riding her and have the person on the ground control your mare's canter, with your help.

How much turn out does your mare get? She could have all this built up energy and just wants to let it all out. I say ride it out, and then once she has calmed down then u could start working with her.
If not I sugguest half halting, lounging normally doesnt work for me, its more like a warm up for Dutch, I do that so when I go to get on he's ready for a work out.
