cutting or something?

I ride english but I used to ride western.what exactly is cutting.I always hear people at my barn talking about it!!!

As a former team roper befor I took up English, cutting is where the horse and rider 'cut' or seperate one cow from the herd. It involves some intricate moves from the horse and it is fun to watch. Lots of work on the horses part on the hind legs.
